Paganelli's Risotteria started in 1997 with the aim of introducing Torontonians and visitors to the cuisine of Emilia-Romagna, a northern province widely considered the gastronomic capital of Italy. The restaurant is now run by Chef Andrea Boscherini, who brings his own expertise and bold flavors to the authentic dishes prepared using traditional Italian recipes and wholesome, house-made ingredients.
